Bourbon-Glazed Salmon Bites

Ingredients
- 2 lb thick salmon filets
- 2 tbs olive oil
- 1 tsp kosher salt
- 1 tsp black pepper
- 3 green onions, diced (for garnish)
- 1 tbsp olive oil
- 4 cloves garlic, minced
- 1 onion, chopped
- 2 cups brown sugar
- 1/2 cup beef broth
- 1/2 cup soy sauce
- 1/2 cup red wine vinegar
- 1 tbsp Tabasco sauce
Preparation
- Cut salmon filets into 50 even cubes. Coat with olive oil. Season with salt and pepper.
- Heat your grill to high. Place salmon skin-side down on the grill and grill for 4-5 minutes on each side. Drizzle with glaze and grill for 2 more minutes.
- Remove from grill.
- Place Roasted Garlic Gluten-Free Oat Thins evenly on a platter, set salmon cubes on top of Oat Thins, and spoon on more glaze.
- Sprinkle with green onions to garnish, and serve!
