Bourbon-Glazed Salmon Bites with Lan Panzanella Gluten Freen Oat Thins



  • 2 lb thick salmon filets
  • 2 tbs olive oil
  • 1 tsp kosher salt
  • 1 tsp black pepper
  • 3 green onions, diced (for garnish)
  • 1 tbsp olive oil
  • 4 cloves garlic, minced
  • 1 onion, chopped
  • 2 cups brown sugar
  • 1/2 cup beef broth
  • 1/2 cup soy sauce
  • 1/2 cup red wine vinegar
  • 1 tbsp Tabasco sauce


  1. Cut salmon filets into 50 even cubes. Coat with olive oil. Season with salt and pepper.
  2. Heat your grill to high. Place salmon skin-side down on the grill and grill for 4-5 minutes on each side. Drizzle with glaze and grill for 2 more minutes.
  3. Remove from grill.
  4. Place Roasted Garlic Gluten-Free Oat Thins evenly on a platter, set salmon cubes on top of Oat Thins, and spoon on more glaze.
  5. Sprinkle with green onions to garnish, and serve!
