Vanilla Dolcetini Pudding

Made With: Cinnamon Dolcetini

A wonderfully sweet treat for dessert any day of the week!

Ingredients

  • 1/2 vanilla bean
  • 4 cups whole milk
  • 1/2 cup heavy cream
  • 1/2 cup sugar
  • 1 cinnamon stick
  • 1/8 tsp salt
  • 1/4 cup cornstarch
  • 4 large egg yolks
  • 2 Tbsp unsalted butter
  • Cinnamon Dolcetini

Preparation

  1. Split the vanilla bean lengthwise and scrape the seeds into a saucepan. Add the vanilla pod, milk, cream, sugar, cinnamon stick, and salt, and bring to a simmer over medium heat. As soon as the mixture reaches a simmer, remove from heat, and let sit for 15 minutes.
  2. In a large bowl, whisk egg yolk and cornstarch. Slowly whisk in milk mixture, then pour combined egg-milk mixture back into the saucepan. Bring to a boil over medium heat, whisking constantly until thick, about 3 minutes. Stir in butter, then pour pudding through a fine mesh sieve into a bowl, and let cool slightly.
  3. Crumble Dolcetini cookies, and put half of the crumbled Dolcetini into the serving bowls. Pour pudding into bowls over Dolcetini, cover, and refrigerate until cold, about 3 hours. When ready to serve, top with reserved crumbled Dolcetini, and enjoy!
