Vanilla Dolcetini Pudding

A wonderfully sweet treat for dessert any day of the week!
Ingredients
- 1/2 vanilla bean
- 4 cups whole milk
- 1/2 cup heavy cream
- 1/2 cup sugar
- 1 cinnamon stick
- 1/8 tsp salt
- 1/4 cup cornstarch
- 4 large egg yolks
- 2 Tbsp unsalted butter
- Cinnamon Dolcetini
Preparation
- Split the vanilla bean lengthwise and scrape the seeds into a saucepan. Add the vanilla pod, milk, cream, sugar, cinnamon stick, and salt, and bring to a simmer over medium heat. As soon as the mixture reaches a simmer, remove from heat, and let sit for 15 minutes.
- In a large bowl, whisk egg yolk and cornstarch. Slowly whisk in milk mixture, then pour combined egg-milk mixture back into the saucepan. Bring to a boil over medium heat, whisking constantly until thick, about 3 minutes. Stir in butter, then pour pudding through a fine mesh sieve into a bowl, and let cool slightly.
- Crumble Dolcetini cookies, and put half of the crumbled Dolcetini into the serving bowls. Pour pudding into bowls over Dolcetini, cover, and refrigerate until cold, about 3 hours. When ready to serve, top with reserved crumbled Dolcetini, and enjoy!
