A delectable treat for any sweets lover, with the characteristic Croccantini crunch!

1 1/2 cups creamy peanut butter

2 1/2 cups powdered sugar

2 Tbsp. milk

1 tsp vanilla

1/2 tsp sea salt

2 cups milk chocolate chips

2 tsp shortening

  1. In the bowl of a stand mixer, add peanut butter, powdered sugar, milk, vanilla, and salt.  Beat until combined.
  2. Scoop out approximately 1 tablespoon of the peanut butter mixture and spread onto one Mini Croccantini.  Carefully place a second Mini Croccantini on top, creating a sandwich with the peanut butter mixture between the two.  Repeat until peanut butter is used up.
  3. In a microwave safe bowl, heat chocolate chips and shortening on low power for 20 second intervals.  Stir chocolate chips between intervals, to prevent the chocolate from seizing.  Once chocolate is melted, dip one end of the peanut butter Croccantini sandwiches into the chocolate.  Let cool and serve, or refrigerate for up to one week.
