Spring Ricotta Dip
1 lb. absolute best quality ricotta cheese
1 clove garlic, peeled and crushed or grated
1 lemon’s zest
3 Tbsp. extra virgin olive oil
2 Tbsp. fresh parsley, finely chopped
1 Tbsp. snipped fresh chives
1 Tbsp. fresh mint, finely chopped
1. Combine all ingredients, and add a good squeeze of lemon juice.
2. Cover and refrigerate for several hours (at least 2, up to 4).
3. Serve with Whole Wheat Croccantini and enjoy!
