
Deconstructed Corned Beef
Our own take on a hearty, savory classic!
Corned Beef
1-2 lbs corned beef brisket
1 tsp black pepper
1 medium onion, cut into wedges
2 cloves garlic
1 head red cabbage
Vinaigrette
1/2 cup white vinegar
1 Tbsp. honey
1 Tbsp. prepared Dijon-style mustard
1/2 tsp of freshly ground black pepper
2 tsp sea salt
2 tsp minced garlic
1 cup vegetable oil
- Put the corned beef brisket in a large pot. Add peppers, onions and garlic. Cover brisket with water and bring to a boil, then simmer for 3-5 hours.
- Shred red cabbage and set aside
- In a small bowl, whisk together the vinegar, honey, mustard, pepper, salt, garlic and oil until thoroughly combined. Chill until ready to serve
- Place cooked corn beef on cracker and top with shredded uncooked cabbage
- Drizzle mustard vinaigrette on cabbage
