A light, crunchy snack made with the fresh flavors of cucumber and feta cheese.

6 tsp extra virgin olive oil

3 oz feta cheese

1/2 tsp fresh lemon juice

Coarse sea salt and freshly cracked black pepper

1 small English cucumber, thinly sliced

  1. Preheat oven to 450F, and brush Croccantini with 2 teaspoons of olive oil.  Bake in oven until golden, 2-3 minutes.
  2. In a small bowl, mash together feta, 4 teaspoons olive oil, and lemon juice with a fork.  Season with sea salt and black pepper to taste.
  3. Spread feta mixture over Croccantini, and top with cucumber.  Serve immediately.
