Combining the delicious flavors of hearty bacon, zingy chorizo, and ground pork, these heavy appetizers are perfect for game day celebrations or backyard get togethers.

1 1/2 lbs ground pork

1/2 lb fresh Mexican chorizo sausage, casings removed

1/4 cup pepper jack cheese, finely grated

1 small shallot, finely chopped

1 clove garlic, finely chopped

Sea salt and freshly cracked black pepper

Curly leaf lettuce, separated into individual leaves

3 plum tomatoes, thinly sliced

1/4 cup mayonnaise

1 tbsp smoked paprika

1 tsp hot sauce of your choice (we like Crystal or Sriracha)


  1. Mix mayonnaise, smoked paprika, and hot sauce in a medium bowl.  Cover with plastic wrap, and refrigerate until serving.  Can be made a day in advance.
  2. In a medium bowl, mix ground pork, chorizo, pepper jack, shallot, and garlic, and season with salt and pepper to taste.  Form the meat into small, equally-sized patties about 1.5″ long.
  3. Cook the patties on a flat top grill pan on medium-high heat for 2-3 minutes on each side, or until cooked through.  Remove patties from pan, and serve on Roasted Garlic Mini Croccantini with half a slice of bacon, lettuce, tomato, and smoked paprika mayonnaise.
