Southwestern Chopped Chicken Salad
6 cups Romaine lettuce, chopped
6 cups cooked chicken, cubed
1 1/2 cups fresh corn, roasted and removed from cob
1 1/2 cups black beans, drained
2 medium tomatoes, chopped
1 avocado, diced
1/2 red onion, diced
handful fresh cilantro, chopped
1/2 cup plain Greek yogurt
3 Tbsp extra virgin olive oil
2 tsp honey
2 tsp apple cider vinegar
1 tsp garlic, minced
Juice from 1 lime
1/2 jalapeno, finely diced
2 heaping tsp taco seasoning
Sea salt and freshly cracked pepper to taste, if desired
- Combine romaine, chicken, corn, black beans, tomatoes, avocado, red onion, and cilantro in a large bowl.
- In a medium bowl, whisk together yogurt, olive oil, honey, apple cider vinegar, lime, jalapeno, and taco seasoning. If desired, add salt and pepper after other dressing ingredients have been combined.
- Spoon dressing over salad, then toss well to combine. Serve cold.
