Pear, Walnut, and Blue Cheese Pizzantini
8oz fresh mozzarella, shredded or thinly sliced
1 – 2 ripe pears, thinly sliced
1oz walnuts, chopped
1/2 cup crumbled blue cheese
1/4 cup yellow onion, diced
1 Tbsp butter
2 Tbsp extra virgin olive oil
Arugula if desired
- Preheat oven to 350F. Arrange walnuts in a single layer on a rimmed baking sheet lined with parchment paper. Toast walnuts in oven until fragrant and slightly browned, between 5 – 10 minutes.
- In a medium skillet, melt butter, then add diced onions and cook, stirring occasionally, until caramelized, about 10-15 minutes. Remove from heat and set aside.
- Brush your favorite flavor of full-size Croccantini® with olive oil, and cover with mozzarella cheese. Then top with pears, toasted walnuts, blue cheese, and caramelized onions. Transfer Pizzantinis to a rimmed baking sheet, and bake until cheese melts, about 5-10 minutes, keeping an eye on the edges of your Pizzantini to make sure it doesn’t burn!
- Remove from the oven and let cool for 1-2 minutes, then cut into pieces. Top with arugula if desired, serve and enjoy!
