Cucumber and Russian Caviar
3-4 Radishes – thinly sliced
1 small cucumber -Slice into 1/4-inch half rounds,
2 Tbs. Sour cream
4 oz. Cream cheese
1 Tbs. fresh dill finely chopped
freshly ground black pepper-to taste
fresh dill sprigs
5-6 Tbs. Red Caviar
In a mixer bowl combine cream cheese, sour cream, fresh chopped dill, salt and pepper mix them well until smooth texture.
Arrange Croccantini on a serving tray. Pipe or spread each Croccantini with cream cheese mixture. Top with a spoonful of Red Caviar, one slice radish and cucumber and sprig of dill. Serve.
