Steak Salad with Black Pepper/Blue Cheese Bites

  • ½ cup red wine
  • 3 tablespoons lemon juice
  • 2 tablespoons honey
  • 1 teaspoon each salt & pepper
  • 1 cup olive oil
  • 1 cup crumbled blue cheese
  • 1 cup cut cherry tomatoes
  • 4 La Panzanella Black Pepper Croccantini crackers
  • 1 head romaine lettuce cleaned and cut into bite sized pieces
  • 3 cups arugula cleaned and cut into bite sized pieces
  • 1 pound of your favorite steak pan fried or grilled and cooled
  1. For vinaigrette: mix red wine vinegar, lemon juice, honey, salt & pepper in a blender.
  2. Once combined, slowly add olive oil while blender is on until emulsified.
  3. In a small bowl, crush 2 Croccantini and stir in blue cheese until coated.
  4. In a bowl, combine the romaine and arugula, and toss with ¼ cup of the dressing.
  5. To serve, top salad with sliced steak, blue cheese bites, and broken Croccantini. Enjoy!
