Steak Salad with Black Pepper/Blue Cheese Bites
- ½ cup red wine
- 3 tablespoons lemon juice
- 2 tablespoons honey
- 1 teaspoon each salt & pepper
- 1 cup olive oil
- 1 cup crumbled blue cheese
- 1 cup cut cherry tomatoes
- 4 La Panzanella Black Pepper Croccantini crackers
- 1 head romaine lettuce cleaned and cut into bite sized pieces
- 3 cups arugula cleaned and cut into bite sized pieces
- 1 pound of your favorite steak pan fried or grilled and cooled
- For vinaigrette: mix red wine vinegar, lemon juice, honey, salt & pepper in a blender.
- Once combined, slowly add olive oil while blender is on until emulsified.
- In a small bowl, crush 2 Croccantini and stir in blue cheese until coated.
- In a bowl, combine the romaine and arugula, and toss with ¼ cup of the dressing.
- To serve, top salad with sliced steak, blue cheese bites, and broken Croccantini. Enjoy!
