Northwest Oysters With a Kick
- 6 tablespoons unsalted butter
- 1 teaspoon kosher salt
- ½ teaspoon black pepper
- 1 small finely chopped onion
- 3/4 cup finely chopped celery
- 1 tablespoon minced garlic
- 1 dozen oysters on the half shell
- 1 bag La Panzanella Fennel Croccantini
- 2 teaspoons lemon zest
- 1 tablespoon dried oregano
- Preheat oven to 425 degrees F.
- Melt butter in sauté pan. Add onion, celery and ½ kosher salt and let sweat for 5 to 7 minutes. Add garlic, cook 1 minute. Add crushed Croccantini and lemon zest, pepper, oregano and cook 3 minutes.
- Place oysters on a sheet pan and top with cracker mixture.
- Bake for 10 – 12 minutes. Topping should be lightly browned. Enjoy!
