Northwest Oysters With a Kick

  • 6 tablespoons unsalted butter
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • 1 small finely chopped onion
  • 3/4 cup finely chopped celery
  • 1 tablespoon minced garlic
  • 1 dozen oysters on the half shell
  • 1 bag La Panzanella Fennel Croccantini
  • 2 teaspoons lemon zest
  • 1 tablespoon dried oregano
  1. Preheat oven to 425 degrees F.
  2. Melt butter in sauté pan. Add onion, celery and ½ kosher salt and let sweat for 5 to 7 minutes. Add garlic, cook 1 minute. Add crushed Croccantini and lemon zest, pepper, oregano and cook 3 minutes.
  3. Place oysters on a sheet pan and top with cracker mixture.
  4. Bake for 10 – 12 minutes. Topping should be lightly browned. Enjoy!
